- 3 russet potatoes (2 pounds)
- 1 Tbsp. minced garlic, or to taste
- 3 Tbsp. olive oil
- Coarse salt and freshly ground pepper

Preheat oven to 450 degrees F. Cut each potato lengthwise into 12 wedges. Toss potatoes with garlic and oil on a rimmed baking sheet, then season with salt and pepper. Spread in an even layer.
Roast until browned and crisp on the bottom, about 25 minutes; turn wedges with a spatula and continue cooking until browned and crisp all over, about 20 minutes more.
