Ingredients

  • 1 cup all-purpose flour
  • 3 cups coarse whole wheat flour, such as Odlums or Howard's brand
  • 1 Tbsp. wheat germ
  • 1 Tbsp. oat bran, such as McCann's brand
  • 1 Tbsp. brown sugar
  • 2 tsp. baking soda
  • 1 large egg
  • 4 Tbsp. unsalted Kerrygold Irish butter, melted
  • 1-1/2 to 1-3/4 cups buttermilk
  • 2 Tbsp. sesame seeds (optional)

Preparation

Step 1

Preheat the oven to 375 degrees F. Butter and flour a 9x5x3-inch loaf pan.
In a large bowl, stir together the dry ingredients. Make a well in the center. With a wooden spoon, stir in the egg, melted butter and 3/4 cup of the buttermilk. Mix well and gradually add enough of the remaining buttermilk to form a soft dough.
Spoon the dough into the prepared pan, smooth the top with a spatula that has been dipped in water or buttermilk, and sprinkle with the sesame seeds, if using. Bake for 35 to 40 minutes, or until a skewer inserted in the center comes out clean and the bread sounds hollow when tapped on the bottom. Remove from the oven and let cool in the pan on a wire rack for 10 minutes. Turn the bread out onto a rack and let cool, right side up, for about 1 hour to make slicing easier.
