Ingredients

  • 2 large poblano peppers, halved lengthwise & seeded
  • 1 large tomato, cored & halved
  • 1 small onion, quartered
  • 3 cloves garlic, unpeeled
  • 4 hamburger buns, split open
  • 1 egg white, lightly beaten
  • 1/2 tsp. oregano
  • 1/2 tsp. cumin
  • 1/2 tsp. chili powder
  • 11/2 lbs. ground chuck
  • 6 slices muenster

Step 1

Preheat broiler. Put poblanos cut-side down on foil-lined broiler pan. Add tomatoes, onions & garlic;broil until charred, 7-8 min. Cool slightly, then peel garlic. Chop garlic, onion & tomatoes;toss in bowl with salt to taste. Peel poblanos & cut each in half.

Preheat oven to 350 degrees. Brush bun tops with egg white. Mix oregano, cumin & chili powder, sprinkle on tops & bottoms of buns over a baking sheet. Bake 5 min.

Shape beef into four ¾ in. thick patties;make an indentation in centers. Sprinkle with salt & cook until browned on bottom, about 4 min. Flip, then top each with some tomato mixture & cheese. Cover & cook 3-5 min. Serve on spiced buns with poblanos & remaining tomato mixture.
