Ingredients

  • 1/4 c. butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 c. green pepper, chopped
  • 1/4 c. red pepper, chopped
  • 2 carrots, peeeled and diced
  • 4 14 1/2 oz cans chicken broth
  • 4 c. redskin potaotes quartered
  • 1/4 tsp nutmeg
  • 1 1/2 tsp dried thyme
  • 2 tbsp all-purpose flour
  • 2/3 c. water
  • 2 c. milk
  • 11 oz can corn, drained
  • 2 c. cooked ham, diced oyster crackers.

Preparation

Step 1

Melt butter in a large pot over medium heat; saute onion, garlic, peppers and carrots until tender. Add broth, potatoes, nutmeg and thyme. Reduce heat; cover and simmer for 1 1/2 hours. Bring to a boil. Whisk flour and water together and slowly add to chowder. Boil until thickened. Remove from heat and slowly pour in milk; stir in corn and ham. Serve with oyster crackers
Serves 6.
