  • 1 1 1 head romaine lettuce
  • Traditional Caesar croutons
  • Shredded Parmesan cheese
  • Cardini's Caesar dressing
  • Cracked pepper
  • 1 2 1 2 1 - 2 chicken breasts (depending on # of people)
  • McCormick Mesquite seasoning

Step 1

Preheat broiler - season chicken well with mesquite seasoning, grill on a glass pie plate or broiler pan. I like the pie plate since I can slice up the chicken right in the plate when ready. Grill approx. 7-9 minutes on each side or until well browned and juices run clear.

While the chicken is cooking prepare the salad, or start the bruschetta, grill the chicken and prep salad then finish the bruschetta.

Clean and cut romaine into large bite size pieces, add to a large salad bowl and pour on a few Tablespoons of dressing, I usually go a little light and add more if needed. Better if a little underdressed than overdressed. Add a handful of shredded parmesan and a good teaspoon or more of fresh cracked pepper (to taste) Mix well. Add croutons.

Slice chicken across grain into strips cut strips in 1/3's to nice bite size chunks.

Serve lettuce on large individual salad plates, add chicken, serve with bread or bruschetta. Enjoy!
