Ingredients

  • Meat mixture:
  • 1 1/2 lbs. ground turkey
  • 1/2 cup Italian bread crumbs
  • 1/2 cup milk or tomato juice
  • 2 Tbs instant minced onion
  • 1/2 tsp each garlic, salt and black pepper
  • 1 egg
  • Filling:
  • 1 10 oz pkg frozen chopped spinach, thawed, drained
  • 1 cup shredded cheddar scheese
  • 2 Tbs parmesan cheese
  • Topping:
  • 1/2 cup ketchup
  • 1 Tbs brown sugar
  • 1 tsp prepared mustard

Preparation

Step 1

Combine meat mixture ingredients in large bowl. Mix well. Place on large piece of waxed paper and pat into 9x12-inch rectangle. Combine all ingredients for spinach filling. Spread evenly over meat. Roll up from 9-inch side. Press ends and seam to seal. Place seam side down in shallow baking pan. Bake at 350 for 1 hour. Combine topping ingredients and spoon over meatloaf. Bake 30 minutes more or until no longer pink in the center.
