Cranberry Pork Roast

Ingredients

  • 1 can whole berry cranberry sauce
  • 1 medium onion chopped
  • 1 can (5.5 oz) apricot nector
  • 1/2 cup each sugar and coarsely chopped dried apricots
  • 2 tsp cider or distilled white wine vinegar
  • 1 tsp each dry mustard and salt
  • 1/4 tsp crushed red pepper
  • 1 boneless pork loin roast (2 1/2 lb)

Preparation

Step 1

Put pork in Crock pot. Spoon half the mixture over top and cook on low for 6 to 8 hours.

When pork is done heat the remaining mixture until cranberry sauce is melted. Serve sauce in gravy boat or pour over sliced pork on serving platter
