Cranberry Pork Roast

Ingredients
- 1 can whole berry cranberry sauce
- 1 medium onion chopped
- 1 can (5.5 oz) apricot nector
- 1/2 cup each sugar and coarsely chopped dried apricots
- 2 tsp cider or distilled white wine vinegar
- 1 tsp each dry mustard and salt
- 1/4 tsp crushed red pepper
- 1 boneless pork loin roast (2 1/2 lb)

Step 1
Put pork in Crock pot. Spoon half the mixture over top and cook on low for 6 to 8 hours.
When pork is done heat the remaining mixture until cranberry sauce is melted. Serve sauce in gravy boat or pour over sliced pork on serving platter
