Ingredients

  • 8 Slices French or Italian bread,crusts removed
  • 4 thick slices (about 4oz. total)Mozzarella cheese
  • 3/4 cup milk
  • 1/3 cup all-purpose flour
  • 2 eggs lightly beaten with 1 tablespoon water
  • 3 tablespoons each olive oil and butter or margarine
  • 2 tablespoons chopped canned anchovies
  • 1 tablespoons lemon juice

Step 1

Make sandwiches,using 2 slices bresd and 1 slice cheese for each,Have ready milk,flour,and egg mixture,each in a separate shallow dish.Heat oil and butter in a wide frying pan over medium heat until foamy.Lightly dip each sandwich,on both sides,coating all over,first in milk,then in flour,and finally in egg.Place in pan and brown on both sides turning once until crusty and golden;remove to a warm plate.To drippings in pan add anchovie and lemon juice,stirring to combine well.Pour Sauce over sandwiches . Cut sandwiches in half and serve hot,to eat with a knife and fork.
