Ingredients

  • 1/3 + cup oil
  • 2 cups fish consomme' (if using fish if using chicken use chicken stock)
  • 2 lbs fish-- shrimp, clams or white fish (or a combination of chicken and Chorizo)
  • 1 cup Arborio rice
  • 1 green pepper, chopped
  • 1 roasted red pepper, cut into strips
  • 6 oz peas
  • 1 small onion, chopped
  • 2 small fresh tomatoes, seeded and chopped
  • 1 small garlic clove
  • 1 small thread of saffron
  • parsley
  • salt

Preparation

Step 1

Heat the oil and add the onion and tomatoes. Saute' for 5 minutes and then puree. Boil the shell clams until open, cook the shrimp until just pink and cook any white fish until almost done and then set aside. (If using chicken and chorizo, cook until lightly browned). Lightly oil the Paella pan and add the pureed onions and tomatoes. Add the green pepper, peas, the boullion, the rice and if using the chicken and chorizo, add this as well. Smash the garlic, parsley, salt and saffron in 2 Tbsp warm water and stir into the rice mixture. As soon as the rice mixture starts to boil put it in a 350 degree over for 30 minutes. If using fish, add to the paella bout 5 minutes before done. Decorate with the red pepper strips and serve.
