Ingredients
- 1/2 carton (8 ounces) egg substitute
- 1 medium potato, sliced
- 1 medium tomato, chopped
- 3 green onions or 1/2 zucchini, chopped
- 2 tbsp grated Parmesan cheese
- 2 tbsp vegetable or olive oil
- 1/4 cup chopped fresh basil or 1 tsp dried basil

Step 1
Heat 1 tablespoon oil in a 9-inch skillet over medium heat. Cook onions, tomatoes, and basil for 2 minutes. Remove to plate. Cook sliced potatoes in 1 tablespoon oil and leave layered in skillet. Mix Parmesan with egg substitute and pour over potatoes. Sprinkle tomatoes and onions on top. Cook at medium heat for 3 - 4 minutes until eggs are thickened but still moist.
