Peanut Butter Honey Cookies

Ingredients

• 1/2 cup butter
• 1/2 cup sugar
• 1 cup peanut butter
• 2 eggs
• 1 cup honey
• 2 tsp vanilla
• 2 cups flour
• 1 tsp baking soda
• 1/2 tsp salt
• 1 tsp cinnamon
• 2 cups Special K or other hi-fiber cereal

Preparation

Step 1

1. Cream butter, sugar and peanut butter. Add eggs, honey and vanilla. Beat until light in color.

2. Sift dry ingredients and add to first mixture, a little at a time. Add cereal. Shape into rolls and wrap in plastic wrap. Refrigerate overnight.

3. Slice into 1/4" slices. Bake in 350F for about 8-10 mins. Remove from cookie sheet to wire rack.
