Chicken Caprese with Tomato Basil Creme

Ingredients

  • 4 boneless chicken breasts
  • 2/3 cup soft bread crumbs
  • 2/3 cup crumbled feta cheese BREAD CRUMB MIXTURE
  • 1 Tbsp. fresh basil
  • 1/4 tsp. salt & pepper
  • 1 cup spaghetti sauce
  • 2 Tbsp light sour cream TOMATO BASIL CREAM SAUCE
  • 2 Tbsp chopped fresh basil
  • cook all ingredients in a small saucepan over low heat, stirring often,
  • 5 minutes

Preparation

Step 1

whisk together 3 Tbsp. olive oil & 2 tbsp. lemon juice

Dip chicken into olive oil mixture & dredge in bread crumb mixture, pressing to coat.
Place in a lightly greased 11x7 baking dish
Bake at 375 for 45 min. or until chicken is done

Serve with tomato basil cream sauce
