Ingredients
- 1 cup all purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 tablespoon butter (melted - or can use vegetable oil)
- 1 egg
- 1 tablespoon butter (to taste)
- 2 tablespoons maple syrup (to taste)
- 2 tablespoons sugar (for sprinkling))

Step 1
In a medium bowl sift flour, sugar, baking soda and salt. In a large bowl, whisk together buttermilk, melted butter and egg. Gently fold flour mixture into buttermilk mixture. Do not over-mix. Batter should have pea-sized lumps.
Preheat griddle and grease lightly. For each pancake, ladle 3 to 4 tablespoons of batter onto the griddle.
Cook on medium heat until golden brown and holes appear on top. Turn and cook the other side.
Serve immediately with butter, syrup or sprinkled sugar.
