Ingredients
- 6 med. Potatoes, peeled and sliced
- 2 carrots, diced
- 2 qt. water
- 1 onion, chopped
- 6 T. butter
- 6 T. flour
- 1 1/2 c. milk
- Cheddar Cheese
Preparation
Step 1
In lg. kettle, cook potatoes and carrots in water until tender, about 20 min. Drain, reserving liquid and setting vegs. aside. In same kettle, sauté onion in butter until soft. Stir in flour, gradually add milk, stirring constantly until thickened. Gently stir in cooked vegs. Add 1 c. or more reserved cooking liquid and cheddar cheese until soup is desired consistency.
