Rib Roast

Sunday dinner is my favorite and this roast is my favorite to make. Serve it with horseradish sauce and roasted potatoes and your favorite vegetables.

Ingredients
- 3 rib "oven ready" standing rib roast (7 to 8 pounds)
- 1 tablespoon kosher salt
- 1 1/2 teaspoon ground black pepper

Step 1
A couple of hours before roasting set it out on the counter so that it can come to room temperature.
Preheat oven to 500. Place oven rack on second lowest position.
Place the roast in a pan large enough to hold it comfortably, bones side down and spread the top thickly with salt and pepper. Roast the meat for 45 minutes.
Without removing the meat from the oven, reduce the oven temperature to 325* and roast for another 30 minutes.
Finally, increase the oven to 450* and roast for another 15 to 30 minutes until the internal temp reads 125* Total cooking time is 1 1/2 to almost 2 hours.
Cover with foil and let rest for about 20 minutes before slicing.
