Ingredients
- Meringues:
- 4 egg whites room temperature
- 1/2 t cream of tartar
- 1/4 t salt
- 2 cups confectioner's sugar
- Filling:
- 9-10 oz semi sweet chocolate
- 6 T water
- 1 pint heavy cream
- 1/3 cup sugar
- 2 pints strawberries- most sliced but save some whole for topping
Preparation
Step 1
1. beat egg whites with tartar and salt till stiff. with mixer running add sugar 1 T at a tie till stiff (20 minutes of beating)
2. draw 3 9 inch circles on parchment paper on a cookie sheet and spread 1/3 of the meringue mixture on each. bake at 250 degrees for 1 hour. turn off oven and let meringues cool in oven.
3. melt chocolate with water in double boiler and set aside.
4. whip cream till stiff and add sugar gradually and beat till very stiff.
5. to assemble: place one meringue on a plate, spread thin layer of chocolate, top with 1/3 of whipped cream and 1 pint of sliced strawberries, repeat procedure when top the last meringue drizzle the remaining chocolate over and decorate with whole strawberries.
6. refrigerate for 3 hours or more.
