Puff Pastry Cinnamon Rolls

These little beauties are not only golden and gorgeous, but from start to finish, they’re ready in about 35 minutes. Perfecto. These flaky/buttery rolls are packed with a cinnamon-sugar mixture and fresh chopped OPTIONAL nuts, ahem. I’ve also included a cream cheese icing recipe, in case you want to drizzle these bad boys.

Ingredients
- tablespoons finely chopped pecans, walnuts or almonds (optionaCream Cheese Icing:
- one sheet of frozen puff pastry sheets, thawed (I used Pepperidge Farm)
- 3 tablespoons white granulated sugar (reserve one tablespoon)
- 3 tablespoons brown sugar
- 1 1/2 – 2 teaspoons cinnamon
- 2-3 tablespoons melted butter, cooled
- 2 ounces (1/4 package) cream cheese
- 2 tablespoons melted butter
- 1/4 teaspoon vanilla extract
- 1/3 cup powdered sugar, possibly a little more
- 1-2 tablespoons milk for thinning

Preparation
Step 1
Makes 6 rolls
Directions:
Preheat oven to 400 F. Spray a muffin tin with non-stick spray (spray 6 cups only, unless doubling the recipe, then spray the entire pan) Set aside.
Combine brown sugar, 2 1/2 tablespoons of white sugar (reserve one half tablespoon of white sugar) and cinnamon in a small bowl, set aside.
Sprinkle sugar mixture evenly on top of the butter. Sprinkle with nuts (if you’re using them). Gently roll your dough, swiss roll style. Cut roll into 6 individual slices.
( If you’ve doubled the recipe, repeat steps with the next sheet of puff pastry at this point. Keep the previously sliced rolls in the fridge while you do this)
Place one slice in each greased cup, making sure the swirl faces upwards. Try to get them as straight as possible, so that they don’t lean during baking.
Bake at 400 F for 20-30 minutes. Rolls will be a golden brown when done. Remove from oven.
While rolls are still hot, sprinkle lightly with reserved 1/2 tablespoon of white granulated sugar. Serve with cream cheese icing if desired, and
Cream Cheese Icing:
2 ounces (1/4 package) cream cheese
2 tablespoons melted butter
1/4 teaspoon vanilla extract
1/3 cup powdered sugar, possibly a little more
1-2 tablespoons milk for thinning
Directions:
In a small bowl combine cream cheese, butter and vanilla, whisk together until smooth. Add powdered sugar, whisk until smooth. Add milk one tablespoon at a time, until desired consistency is reached. Drizzle over warm cinnamon rolls and ENJOY!!
