Ingredients

  • 3 Tbsp olive oil
  • 2 med garlic cloves, crushed
  • 2 med onions, chopped
  • 1/2 orange pepper, chopped
  • 1/2 red/yellow pepper, chopped
  • 2 med zucchini, sliced
  • 1 bottle dark beer
  • 2 cups cherry tomatoes, halved
  • 1 15 oz can tomato sauce
  • 1 10 oz bag of frozen corn
  • 1 can pinto beans
  • 1 can kidney beans
  • 1 can black beans
  • 3 tsp chili powder*
  • 2 tsp cumin
  • 2 tsp salt
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • 1 Tbsp cocoa powder
  • 1 Hot pepper, finely chopped or
  • 1/2 poblano
  • can use 1tsp of smoked chipotle chili

Preparation

Step 1

Sauté onion then add garlic and both peppers in the olive oil. Add spices and beer. Boil down by at least half. Add corn, tomatoes, tomato sauce, beans (liquid drained)* and zucchini. Simmer 1/2 hour and serve.

*Can purée 2 cups of beans to have thicker soup.
