Ingredients
- 8 oz thick cut bacon
- 2 - 20 oz cans pinto beans drained, rinsed and drained again.
- 1 - anaheim chili roasted peeled and seeded.
- Medium onion diced
- 1-2 tbsp butter (if needed)
- Juice os half a lime
Preparation
Step 1
Roast chili then peel and dice.
Cut bacon into 1/4 inch pieces cook, place on paper towel after fat is rendered reserving bacon grease in pan. Add onions and anaheim chili to the bacon grease and cook until translucent. Added butter if needed to help cook onions and chili. Add the pinto beans and bacon and cook til hot. Squeeze lime after its heated through.
Serve immediately.
