Ingredients

  • Chicken Breast pounded flat
  • Sear on a hot griddle.
  • Put in a 13x9 inch pan.
  • Sprinkle chopped chipotle peppers in adobe sauce on breast.
  • Place Mexican blend cheese and bacon bits on top.
  • Pour a can of Rotel tomatoes on top.
  • If too dry looking pour some chicken into pan.

Bake at 450 until done about 10 minutes.
Serve with Uncle Ben's Mexican Fiesta Rice and Ranch Stlye Beans. (or refried beans)
