Ingredients

  • 7 oz semi sweet chocolate
  • 1/4 lb unsalted butter
  • 7 eggs separated
  • 1 cup sugar
  • 1 t vanilla
  • 1/8 t cream of tartar
  • chocolate shavings
  • cup whipped cream:
  • 1/3 cup powdered sugar
  • 1 t vanilla

Preparation

Step 1

1. in small saucepan melt chocolate and butter over low heat.

2. in large bowl beat egg yolks and 3/4 cup sugar till light and fluffy (about 5 min). gradually beat in warm chocolate and sugar.

3. in another large bowl beat egg whites and cream of tartar till peaks form. add 1/4 cup sugar 1 t at a time. beat till stiff.

4. fold egg whites into chocolate mixture.

5. pour 3/4 of batter in ungreased springform pan. refrigerate rest- covered.

6. bake in 325 degree oven for 35 minutes. remove cake from oven and cool.

cake drops as it cools. remove outside of springform pan.

7. stir refrigerated batter to soften and spread on top of cake.

8. refrigerate till firm.
