Cheddar-Walnut Bread

Ingredients
- 1-1/2 cups self-rising flour
- 1/2 cup whole wheat flour
- 1 tsp. dry mustard
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 tsp. sugar
- 6 Tbsp. unsalted Kerrygold Irish butter, cut into small pieces
- 5 ounces Kerrygold Vintage Cheddar cheese, grated (about 1-1/4 cups)
- 1/2 cup walnuts, chopped
- 2 large eggs
- 1 cup buttermilk

Preheat the oven to 375 degrees F. Lightly butter a 9x5x3-inch loaf pan.
In a food processor, combine the flours, mustard, salt, baking powder, baking soda and sugar. Pulse 2 to 3 times to blend. Add the butter and process for 10 to 15 seconds, or until the mixture resembles coarse crumbs. Set aside 1 Tbsp. of the cheese and 1 Tbsp. of the walnuts for the topping, and add the rest to the food processor, pulsing 8 to 10 times to blend.
Add the eggs and buttermilk and process for 10 to 20 seconds, or until a soft dough forms. Spoon into the prepared pan, smooth the top with a rubber spatula that has been dipped in buttermilk, and sprinkle the remaining cheese and walnuts over the top.
Bake for 35 to 40 minutes, or until a skewer inserted into the center comes out clean. Remove from the oven and let cool on a wire rack before slicing.
