Ingredients

  • Raisin Filling:
  • 1 c. shortening
  • 1 c. sugar
  • 1 c. brown sugar, packed
  • 3 eggs, beaten
  • 4 c. all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp slat
  • 1 t. vanilla extract
  • 1 c. raisins, finely chopped
  • 1/2 c. water
  • 1 Tbsp sugar
  • 1 Tbsp all-purpose flour

Preparation

Step 1

Mix together all ingredients until well combined. Roll out on a lightly floured surface to 1/4" thick. Cut out with a 2" round cookie cutter. Spread Raisin Filling onto half the cookies. Arrange remaining cookies over filling; press edges with a fork dipped in flour to seal. Place on greased baking sheets. Bake at 350 degrees for 9-10 minutes.

Raisin Filling:
Mix together all ingredients in a saucepan over medium heat. Bring to a boil. Remove from ehat; cool slightly.
