Ricotta Mousse with Berries

The combination of fresh, sweet berries and a dollop of ricotta mousse is the perfect ending to any meal.

Ingredients
- 1 cup light ricotta cheese
- 2 Tbs orange liqueur
- 1/2 tsp finely shredded orange peel
- 1/2 cup each fresh sliced strawberries, blueberries, raspberries, and blackberries
- 1 tsp lemon juice
- 1/2-1 tsp splenda or 2 tsp honey
- Fresh mint leaves, optional

Preparation
Step 1
In a small bowl, whisk together ricotta, 1 Tbs of the orange liqueur and the orange peel. Cover and chill for 1 hour to overnight.
In a medium bowl, combine the berries, lemon juice and the remaining 1 Tbs liqueur. Cover and let stand at room temperature 15 minutes to develop flavors.
To serve, divide fruit mixture among 4 dessert dishes, spooning any juices atop fruit in dishes. Top with ricotta mixture. Sprinkle individual servings with splenda or drizzle with honey. If desired, garnish with mint.
