Ingredients
- 2 tsp oil, divided
- 2 eggs, beaten
- 1 small onion, chopped
- 1 Tbs ginger
- 6 cups cooked white rice
- 1 bag peas
- 1/2 lb carrots, sliced
- 1 cup chicken broth
- 3 Tbs soy sauce

Preparation
Step 1
Cook eggs in 1 tsp of oil and cut into thin strips. Sauté onions and ginger in remaining oil for 4 minutes. Add rice and cook for 1 minute. Add remaining ingredients, reduce heat, cover and cook 5-8 minutes (until veggies are tender). Mix eggs into mixture and serve.
