  • 1/3 cup water
  • 1/3 cup light corn syrup
  • 1/4 teaspoon salt
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans or nuts of your choice, chopped

This divinity is so easy to make in the microwave and so good. You won’t ever make it any other way again!  Makes a great gift, too. This recipe is adapted from a Sharp Carousel Microwave Cookbook that came with my first microwave many years ago.

Combine sugar, water, corn syrup and salt in a glass casserole dish.  Cover with saran wrap and microwave on high for 5 minutes. Remove from microwave and take off saran wrap. Stir well and return to microwave uncovered.  Cook on high for another 4 to 5 minutes until reaches hard ball stage when a little is dropped in cold water.  Remove and cool about 4 minutes.  Beat egg whites until stiff with mixer.  Pour sugar mixture over egg whites beating constantly with mixer until mixture starts to lose its gloss and holds together.  About 4 or 5 minutes.  Stir in vanilla and nuts.  Drop by teaspoonful onto wax paper.  Makes about 25 pieces depending on size you make them.  Enjoy!

Note: To clean glass bowl you used in microwave soak in warm soapy water immediately after emptying sugar mixture.

I have tried to make this twice now and every time it burns I guess I had to trow it I the trash. HELP ME PLEASE!!!

Mixer….do you use a hand mixer with this recipe?

My Grandmother used to add marashino cherries (chopped) to hers do you think they will work in this? Thanks! Any tips on adding the cherries?

I’ve never made divinity before. would the moisture fom the cherries make it sticky? sould I add them in while mixing or whenI add the pecans & stir? Thanks!

I like to add candy flavoring that they sell in little 1-dram bottles at the drugstore. They’re available at many drugstores or online in many flavors; my favorite is Butter Rum. You can also drop them into those tablespoon-sized nut cups instead of onto wax paper. Makes them a lot neater and the serving size is just right.

I will try this. the only time I made Divinity I burned the moter out on my mom’s mixer.

I have made divinity for over 50 years, when it is sticky I let it sit in the mixer bowl about a hour to let it dry out a little. when it dries out you can drop it off of a spoon

I make this often and always use clear vanilla flavoring which you can purchase almost anywhere. This is one way of making sure it doesn’t turn tan or brown, etc.

Are the pecans (or nuts in general) optional by chance? If so, will these turn out differently if they are not added; meaning consistency or texture change?

My Mother used to worry about the humidity when making these! I wish she could see how easy these are to make now. I miss my Mother!

I have made the recipe 4 times in the last 10 days. Mine was a little sticky until the last time. I beat the mixture a minute longer to which helped. Love the receipt & my family & friends do too.
