Ingredients

  • 1-1/4 cups all-purpose flour
  • 1/4 cup natural unsweetened cocoa powder (not Dutch-processed) such as Hersey's
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 cup mashed very ripe bananas, from 2-3 bananas
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1/2 cup semisweet chocolate chips

Preparation

Step 1

1. Preheat oven to 350 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, preferably glass.

2. Mix flour, cocoa powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Whisk until there are no more lumps in the cocoa powder and mixture is well combined. Set aside.

3. In a large bowl of electric mixer fitted with paddle attachment, beat butter and sugar until light and fluffy (2-3 minutes). Add eggs to butter mixture, one at a time, beating well after each addition. Add dry ingredients until just combined. Add bananas, sour cream and vanilla and mix on low speed to combine. Fold in chocolate chips. Do not over mix.

4. Pour batter into prepared pan and spread evenly with a spatula. Bake in the preheated oven until a toothpick inserted into the center comes out with a few moist crumbs attached, about 1 hour and 10 minutes. Let rest in pan for 10 minutes, then turn out onto rack to cool completely.

NOTE:
There are two types of unsweetened cocoa powder, natural and Dutch-processed will not work in this recipe. Natural unsweetened cocoa powder is very easy to find and gives this bread a deep chocolate flavor.
