Crazy Pie - Monku in San Mateo

I read that this recipe was called “Mock Apple Pie” by frugal cooks at the turn of the century (1900’s). I got this one from my mother-in-law. Seems VERY 50’s to me.

Ingredients
- 3 egg whites, stiffly beaten
- 1 c sugar
- 1 t baking powder
- 1 t vanilla
- 20 round Ritz crackers, crushed
- 1 c. chopped nuts
- Whipped cream(sweetened with a little vanilla added).

Preparation
Step 1
1.Mix sugar, baking powder, vanilla
2.Add to beaten egg whites
3.Fold in crackers and nuts into egg whites
4.Spoon into a greased 9" pie plate
5.Bake at 325 degrees for 30 minutes
6.When pie is cool, spread on a layer of Cool Whip (and coconut if you like coconut)
7.Chill in freezer for at least 2 hrs, but it’s better if you leave it in the refrigerator for at least a day.
8.Top with whipped cream right before serving
