Chinese Oven-Barbecued Spareribs

Ingredients
- 2 cloves garlic, crushed
- 3 T dark soy sauce
- 2 T dry sherry
- 1 tsp grated fresh ginger
- 1/2 T brown sugar
- 1/2 T sesame oil
- 1/3 tsp each cinnamon, ginger, ground fennel, anise, and clove (or 1/2 tsp 5 spice powder)
- 1 T hoisin sauce
- Tabasco to taste
- 1 T ketchup
- 2 to 3 lbs pork spareribs

Preparation
Step 1
Mix well all the ingredients except ribs. Use to marinate the ribs for 2 hours in fridge.
Place on a roasting rack in a 350 oven for 1 hour. Turn tem up to 400 and raost for an additional 15 minutes or until browned and deliciously tender. Its a good idea to place a baking pan containing about 1" of water in the oven beneath the ribs as they cook, it will prevent the sauce from drippig the the floor of the oven.
