Ingredients
- 1 tbs oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 3 tbs chili powder
- 2 peppers, diced
- 2 slices jalapeno
- 1 green zucchini, diced
- 1 yellow squash, diced
- 1/2 tsp oregano
- 1/4 tsp cayenne pepper
- 1 can (14.5oz) diced tomatoes
- 1 cup corn
- 1 can black beans
- 1/4 tsp salt
- 1/4 cup chopped fresh cilantro
- sour cream and rice are optional

Step 1
1. Heat oil in 4 qt pot over medium heat. Add onion, garlic, and chili powder. Saute for 5 minutes.
2. Add peppers, saute 5 minutes. Add zucchini, squash, oregano, and ground red pepper. Add tomatoes. Cook 10 minutes. Stir in corn, black beans and salt. Cook for 5 minutes.
