RED VELVET CAKE

Ingredients
- Cake:
- 1 Red Velvet Cake mix
- 4 eggs
- 1 cup milk
- 1/2 cup oil
- Frosting:
- 1 stick margarine, softened
- 1 (8 ounce) package cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla
- 1 cup flaked coconut, optional

Step 1
Cake:
Preheat oven to 350 degrees. Combine all ingredients. Beat with electric mixer 30 seconds on low speed. Beat 2 more minutes on high speed. Pour batter into two 8 or 9" greased and floured cake pans. Bake according to directions on box or until toothpick inserted in center comes out clean. Cool.
Frosting:
In large bowl, cream butter and cream cheese. Gradually, beat in powdered sugar on low or medium speed until smooth. Stir in vanilla. If frosting isn't thick enough, add more powdered sugar, 1 tablespoon at a time for desired consistency. Frost layers and sprinkle with coconut. Refrigerate.
Note: Can add 1 cup marshmallow cream, if desired. Spray the cup with cooking spray before measuring the marshmallow cream. It will slide right out of the cup.
For Chocolate Frosting: Add 1/4 cup baking cocoa with the powdered sugar.
