Ingredients

  • 2 1/2 c. flour
  • 1 1/2 c. plus 1/3 c. sugar, divided
  • 1/2 c. baking cocoa
  • 2 tsp. baking soda
  • 2/3 c. vegetable oil
  • 2 T. vinegar
  • 1 tsp. vanilla
  • 2 c. cold brewed coffee
  • 1/2 tsp. ground cinnamon

Step 1

In lg. mixing bowl, combine flour, 1 1/2 c. sugar, cocoa, baking soda. Add the oil, vinegar and vanilla. Beat on low speed until blended. Add the coffee; beat on medium speed for 2 min.
Fill paper-lined muffin cups two-thirds full. Combine cinnamon and remaining sugar; sprinkle half the mixture over batter. Bake at 350 for 20-25 min. Immediately sprinkle remaining cinnamon-sugar over cupcakes. Cool 10 min. before removing from pans to wire racks to cool.
