Ingredients
- 4 C white wine vinegar
- 2 Tbs honey
- 1 tsp juniper berries
- 1 tsp whole cloves
- 2 tsp black peppercorns
- 2 dried bay leaves
- 3/4 pound Fresno chiles, rinsed, stems left on

Preparation
Step 1
Combine all but peppers in saucepan. Bring to a simmer over high heat. Reduce heat and simmer the brine for 10 minutes. Add chiles and return to a boil. Reduce and simmer to soften chiles 4-6 minutes. Refigerate for several weeks.
