Preparation
Step 1
Peel, pit and finely chop nectarines in food chopper, blender or food processor. Measure 2 cups. Rinse, stem, pit and finely chop cherries. Measure 1 1/4 cups. In large bowl or saucepan stir together fruit and lemon juice. Slowly sift in pectin, stirring vigorously. Set aside 30 minutes, stirring occasionally. Add corn syrup, stirring well. Gradually stir in sugar. To hasten sugar dissolving, jam mixture may be heated very slightly, but do not heat to more than 100 F. Ladle into 1/2- or 1-pint freezer containers, leaving 1/2-inch headspace to allow for freezer expansion. Cover with tight lids. Jam to be eaten within a week or two may be stored in the refrigerator. Store the remaining containers in the freezer and transfer to refrigerator as needed.
