Ingredients
- 2 cups bite-sized veggie turkey
- 1 small onion
- 2 garlic cloves
- 1 cup stock
- 1 pint sour cream
- 1 pound Cheddar cheese, grated
- 1 small can diced green chilies
- 12 tortillas

Preparation
Step 1
Put onion, garlic stock, sour cream into blender, blend until smooth. Either cook tortillas in oil until soft, or cut into wedges. If you have softened the tortillas in oil, roll cheese and veggie turkey into them and place in a 9-by-12-inch casserole sprinkled with green chilies then pour sour cream mixture over all and sprinkle with cheese (may be layered into a deeper dish). If tortillas have been cut into wedges, layer, first tortillas, then veggie turkey, then cheese, green chilies, then sauce, repeat layers ending with sauce, sprinkle with paprika if desired. Let stand in refrigerator 8 hours. Bake 350 F 1 hour.
