  • 1 pound well washed spinach
  • 1/4 cup sour cream
  • 2 Tablespoons butter
  • 2 Tablespoons prepared horseradish
  • 1/2 teaspoon salt
  • 1/2 teaspoon tarragon,
  • Pepper to taste

Preparation

Step 1

In a kettle cook 1 pound well washed spinach in the water that clings to the leaves, covered, for 5 minutes, or until it is tender. Or use cooked frozen spinach. Drain the spinach, squeezing out as much moisture as possible, and chop it coarsely. In a saucepan combine the spinach with 1/4 cup sour cream, 2 tablespoons each of butter and prepared horseradish, 1/2 teaspoon each of salt and tarragon, and pepper to taste. Heat the mixture thoroughly, stirring.
