- 1/4 Cup finely chopped ONION
- 1 Teaspoon grated FRESH GINGER
- 1 Tablespoon CIDER VINEGAR
- 2 Tablespoons BROWN SUGAR

Preparation
Step 1
Preheat oven to 400º F. In a baking dish, toss together the TOMATOES, ONION, GINGER, VINEGAR, AND BROWN SUGAR. Roast, uncovered, 30 to 40 minutes or until tomato skins burst and most of the liquid has evaporated, stirring every 10 minutes. Cool slightly, then transfer to a food processor. Process until smooth. Makes 1 1/2 cups.
