Ingredients

  • 3/4 cup butter or margarine
  • 3/4 cup sugar
  • 1 egg
  • 2 cups flour
  • 1/4 tsp baking powder
  • 1 cup shredded coconut
  • 1/2 cup chopped macadamia nuts
  • 1 tsp vanilla
  • 6 ounce jar huckleberry preserves

Preparation

Step 1

In large mixing bowl cream butter and sugar. Add egg, mix well. Gradually add flour and baking powder to butter mixture. Add coconut, macadamia nuts and vanilla. Mix thoroughly. Press two thirds of dough into greased 10-inch-by-10-inch or 9-inch-by-13-inch pan. Spread preserves over dough. Crumble remaining dough over preserves. Bake at 350 F for 35 to 40 minutes or until brown. Cool thoroughly. Cut into bars.
