  • 6 ounces fresh goat cheese, room temperature

To make crostini, preheat the oven to 375°F. Brush the bread slices with the olive oil and arrange evenly on a baking sheet that has been lined with parchment paper or foil. Bake until just barely golden, 12 to 15 minutes. Remove from the oven and let cool to room temperature.

Spread 1 tablespoon of goat cheese on each crostini, then top with a strip of roasted bell pepper, small fresh basil leaf, and a pinch of crushed red pepper flakes.

Arrange crostini on a serving platter.

Crostini (without the toppings) can be made ahead and stored in an airtight container for up to a week.


ALTERNATIVE
Blue Cheese and Red Grape Crostini With Balsamic Glaze: Add 1 teaspoon of crumbled blue cheese onto the goat cheese and top with 1 red grape sliced in half and a drizzle of balsamic glaze. (Balsamic glaze is a thick balsamic syrup that can be found in the vinegar section of the market.)
