Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 egg
  • 3/4 cup orange juice
  • 1/4 cup canola oil
  • 1 tbsp grated orange peel
  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup chopped pecans

Preparation

Step 1

1. In a large bowl, combine the flours, sugar, salt and baking soda. In a small bowl, whisk the egg, orange juice, oil and orange peel. Stir into dry ingredients just until moistened. Fold in blueberries and pecans.

2. Transfer to two 5x3" loaf pans coated with cooking spray. Bake at 350° for 40-45 mins or until a toothpick inserted near the center comes out clean. Cool for 10 mins before removing from pans to wire racks.
