Ingredients
- 3 eggs
- 1 cup (250 mL) sugar
- 2 tbsp (30 mL) grated lemon rind
- 1/4 cup (50 mL) lemon juice
- 1/4 cup (50 mL) butter
- 4 cups (1 L) vanilla ice cream

Step 1
Whisk together eggs, sugar, lemon rind and juice in small saucepan; add butter.
Cook over low heat, stiring constantly, until smoothly thickened. Cool. Alternately spoon vanilla ice cream and lemon sauce into parfait glasses or dessert dishes. Cover, freeze until firm.
Remove from freezer to refrigerator about 15 min before serving. Garnish as desired.
