Ingredients

  • 10 bacon strips, cooked adn crumbled
  • 2 cups flour
  • 1/4 cup sugar
  • 1 Tbsp. baking powder
  • 3/4 cup milk
  • 1 egg
  • 1 1/2 cups shredded cheddar cheese (about 6 oz)
  • 1/4 cup diced canned green chiles

Preparation

Step 1

Cook bacon, reserve 1/3 cup drippings

In a large bowl, combine the flour, sugar, and baking powder.

In a small bowl, beat the milk, egg and reserved bacon drippings. Stir into the dry ingredients until just moistened. Fold in the cheese, chiles, and bacon.

Fill greased or paper-lined muffin cups three-quarters full.

Bake until golden brown, 15-20 minutes.

Serve warm
