Ingredients
- 4 1/2 cups peeled and diced peaches(can also use unpeeled plums and nectarines), about 2 1/2 lbs
- 1 1/2 cups sugar
- 3 TBSP fresh lemon juice
- 1 (1.75-oz) package powdered fruit pectin

Preparation
Step 1
Stir together all ingredients in a 4-qt microwave-safe glass bowl.
Microwave at high 8 minutes (mixture will boil). Stir mixture, and microwave at high 8 to 10 minutes or til thickened. (You are looking for the consistency of pancake syrup. The mix will thicken as it cools and chills.)
Cool mixture completely, about 2 hrs. Serve immediately or cover and chill in airtight containers til ready to serve. Store up to 3 weeks.
