Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 1 tablespoon cinnamon
  • 2 teaspoons vanilla
  • 1 cup flour
  • 3 cups oatmeal (not quick oats)
  • 1 cup chopped walnuts

Directions

Using beaters, combine the butter and sugars.

Add eggs, cinnamon and vanilla and beat well.

Add flour gradually, mixing after each addition.

Scrape as much of the batter back into the bowl as possible.

With a spoon, add the oats and walnuts and mix.

Place a rounded tablespoon of batter on ungreased cookie sheets in rows (recommend 5 rows of 3 cookies as they will spread).

Bake in a preheated oven at 350 degrees for 10 minutes.

Let cool a few minutes on the cookie sheet until they firm up before moving them to wire racks to cool completely.

Store in cookie tins or ziplock bags.
