- 1/2 cup light brown sugar
- 1 fresh orange zested, juiced
- 1 Tbsp dark rum
- 1/2 cup vanilla extract
- 1/8 tsp cinnamon
- 9 ripe bananas peeled, ends trimmed, 3/4 inch slices
- 1 fresh lemon zested
- 1/4 cup Wegmans Dry roasted Macadamia Nuts, chopped and toasted
- 2 pints vanilla ice cream

You'll Need: Porcelain or ceramic quiche dish
Directions:
Preheat oven to 400 degrees.
1. Combine sugar, 1 Tbsp orange juice, rum, vanilla, cinnamon, and orange and lemon zest in large bowl.
2. Fold bananas into orange juice mixture until well coated.
3. Place banana mixture in dish. Cover with foil; place on center rack of oven.
4. Bake 10 min. Remove from oven; carefully remove foil. Stir gently to coat bananas; re-cover with foil.
5. Bake 12-14 min until bananas are soft, yet still hold their shape. Remove from oven; carefully remove foil. Sprinkle with chopped nuts. Portion evenly into 12 serving dishes; top each with 1/4 cup ice cream.
Chef Tip(s):
• To toast nuts: add Macadamia nuts to dry pan on MEDIUM-HIGH. Cook, stirring, 1-2 min until toasted.
• Bananas can be prepared an hour in advance, then covered and chilled. Put in oven 25 min before serving (may need extra cooking time).
