Chicken Enchilada Casserole

This recipe is a lower calorie version as you don't use sour cream and it's delicious with the fat free soup. Serves 8

Ingredients
- 1 medium onion, chopped
- 2-3 Tbsp. Butter
- 1 can cream of chicken soup, reduced fat
- 1 can cream of celery soup, reduced fat
- 1 cup chicken broth, low sodium
- 1 can chopped green chilies, Ortega
- 2-3 lb. chicken breast, cooked & shredded
- 1 pkg. corn tortillas
- 1 lb. Longhorn cheese, grated
- Greek yogurt, fat free

Preparation
Step 1
Brown onion in butter. Combine with soups, broth & green chilies. Add pieces of chicken, blend well. Layer tortillas, chicken sauce and cheese in 9 x 15 pan. Repeat until casserole is filled. Bake at 350° for 30 minutes. Let sit for 15 minutes before serving. Top with a dollop of the Greek yogurt. Enjoy!
