Ingredients
- 1 medium zucchini, cut into bite-sized pieces
- 1 medium summer squash, cut into bite-sized pieces
- 1 medium red bell pepper, cut into bite-sized pieces
- 1 lb fresh asparagus, cut into bite-sized pieces
- 1 red onion, chopped
- 3 tbsp extra-virgin olive oil
- 1 tsp salt
- 1/2 tsp ground black pepper

Preparation
Step 1
Heat oven to 450F. Place the zucchini, squash, peppers, asparagus, and onions into a large roasting pan. Toss with the olive oil, salt, and pepper to mix and coat. Spread in a single layer in pan. Roast and stir occasionally, approx. 30 mins until veggies are lightly browned and tender.
