    slices bacon, cut unto 1 inch pieces

    lg onion finely diced

  • 2

    cloves garlic

  • 1

    tbs minced peeled ginger

  • 2

    tbs tomato paste

  • 2

    12 ounce cans root beer

  • 1

    Tbs apple cider vinegar

  • 2

    tsp molasses

  • 1

    tbs grainy mustard

  • pinch red pepper flakes

  • 1/4

    Tsp garam masala

  • 4

    15 ounce cans cannellini beans, drained and rinsed

Directions

1. preheat oven to 400. Set a med oven safe pot over med heat and add the bacon. cook, stirring, until most of the fat is rendered and the bacon is crisp, about 8 min. Remove to paper towlels. 2. Add onion, garlic, ginger to the drippings in the pot and cook, stirring occasionally, until soft and golden, about 5 min. Add tomato paste and cook until color deepens. about 1 min. 3. add the root beer, vinegar, molasses, mustard, flakes, garam, to the pot. Stir then bring to a boil. Add beans and 3/4 of the bacon. reduce heat to med low and simmer until thickened. about 15 min. transfer to oven and bake uncovered until thick, about 30 min cool slightly and top with the remaining bacon.
