Cheese Popovers

This appetizer is perfect for any gathering. The light and fluffy texture with a cheesy flavor makes your guests ask for more.

Ingredients
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/2 cup whole milk
- 1 large egg
- 1/2 cup grated Cheddar cheese OR Gruyere cheese
- 1 Tbsp chives, finely chopped (opt)
- Nonstick cooking spray

Step 1
Preheat the oven to 350 degrees Fahrenheit.
In a medium bowl, sift together the flour and salt. In a microwave-safe bowl, heat the milk just until it is warm (about 30 seconds). *Do not allow the milk to boil!* In a medium bowl, whisk the egg on LOW speed using an electric mixer until the egg becomes frothy. Increase the speed of the mixer to MEDIUM and add the warmed milk. Gradually add the flour mixture and mix to combine. Add the chives and gently toss to combine.
For Mini Popovers: Spray two 12-hole nonstick mini muffin pans with nonstick cooking spray. Fill every other hole with batter to make a total of 12 popovers.
For Regular Popovers: Spray two 6-hole nonstick muffin pans with nonstick cooking spray. Fill every other hole with batter 3/4 the way to the top of the cavity.
Sprinkle the top of each batter cup with cheese. Bake the popovers for 45-50 minutes or until golden brown.
